Food Hot Holding Cabinet

Peter Keane with new Hot Holding food cabinet recently installed in the Kitchen.

Peter Keane demonstrates the use of the new Alto Shaam 1200-UP low temperature hot holding cabinet. The cabinet was recently purchased at a total cost of $8,000.00.

These funds were raised from the ‘Lighthouse Café’ at the recent Port Fairy Folk Festival. Sandra Winnen, Food Services Managers says that the cabinet features a controlled uniform heat source that gently surrounds the food for better appearance, taste and longer holding life. The cabinet also has an antimicrobial handle to retards the growth of disease causing pathogens. Ms Winnen said the effectiveness of the kitchen will be greatly improved as the cabinet can hold up to 300 meals at a time.
